This salad is great for when you’re feeling lazy but want to eat something healthy whilst using up the small leftovers you usually just throw away. And because of the croutons and the meat it will actually will you up!
For the Croutons Some stale bread (I used two day old tiger bread) cut or pulled apart to small bite sized pieces|A bowl of olive oil, melted butter, crushes garlic cloves, oregano, basil, salt and pepper|2-3 Handfuls of finely grated fresh parmesan. The amounts of these ingredients depends on how much stale bread you’re actually using up.
To make the Croutons Mix the oil mixture and half of the parmesan with the bread in a large brown and lay out on a flat large oven tray so they aren’t on top of each other. Place in the oven at 150c for 15 mins, turn them then another 15 mins. After that take them out scatter the rest of the parmesan over them and put them back in the oven until they are at the desired crispyness.
For the Salad The roasted peppers and chicken from the past meal (see post here)|Cucumber cut up small|A pack of mixed salad and spinach washed and the water shaken off|Olives chopped up|A pack of feta crumbled|Pesto mixed in a bowl with olive oil, salt and pepper for the dressing. Mix it all up in big bowl and voilà an easy, quick and most importantly yummy salad.
